I'm aware you can quick disable with cntrl+alt+del but that is not ideal. I want to enable and disable the application/config with just one button. Any ideas?

The toggle on/off configuration that you describe is only possible using Shift mode.
You need to set up a separate Shift layer, in which all your mappings from the main layer will not be inherited.
Then set the button with which you will get to this layer in Toggle mode. Thus, with this button, you will be able to switch between the native behavior of devices and the game config.
Also, you can use Slots. In one slot, apply the game configuration, and leave the other slot empty.
Then, in Preferences → Slots, set up shortcuts to switch slots. -
